ProSens: Process monitoring in the brewing industry using an optical immersion sensor

Optical measuring method for determining the original wort, inertial sensor technology

 

Aim of the project:

Brewing has a long tradition in Germany, and not just since the Purity Law of 1516. High quality and process requirements must be met during the production and processing of ingredients. During beer production, the fermentation process is of particular importance. The questions of complex process control, such as temperature control and profile, standing times, etc., are nowadays answered on the basis of experience or on the basis of individual measured values determined locally in the fermentation tank.

The aim of the project is to develop a miniaturized measuring system that can provide sensor data wirelessly and autonomously at any position in a fermentation tank. The most important process parameter is the original wort, which is to be determined using a plasmonic refractive index sensor from IKTS. The development focuses on issues of wireless underwater communication, buoyancy control and control of the sensor platform, sterilizability and service life of the plasmonic sensor and the food-safe encapsulation of the measuring system.
